ECOSYSTEM
Thomas is resolute in his commitment to revitalizing the vineyard ecosystem in a predominantly industrial area, showcasing his deep respect for all plants, hedgerows, trees, and forests. Through organic farming, he cultivates a healthy ecosystem that actively supports birds, butterflies, and bees.

METICULOUS CARE
He tends to his plots in Grosse Terre and Corvée with the meticulous care of a protective mother hen. While he can't completely keep deer away from the vines — which can slow the ripening of the grapes — he welcomes the presence of ladybirds for their appetite for harmful pests. To combat disease, Thomas employs biodynamic resources such as nettle, yarrow, chamomile, and horsetail to strengthen his vines.

OBSESSIVE TO DETAIL
He clearly prefers to host wine lovers who speak French, believing his philosophy is best communicated in its original language. His obsessive attention to detail influences everything from the musical experience of the winemaking process to the quality of the corks, the wax on the bottles, the design of the labels, and the elegance of the logo. This meticulous care significantly enhances the craftsmanship of each bottle.

DEEPER DIALOGUE
Our meeting with Thomas was exceptional (and, fortunately, our command of French allowed for deeper dialogue). He shared that he has managed the family estate of eight hectares since 2007. After his father retired in 2019 and his mother in 2020, he focused on just four hectares, aligning his methods entirely with organic farming principles. In the cellar, Thomas follows the natural path of the wine without additives, fully understanding that only healthy grapes, combined with time and patience, will yield excellence.

AUTHENTIC
He oversees two plots: Grosse Terre, originally planted by his mother in the 1970s on marl and limestone soils—favorably located yet producing lower yields—and Corvée, cultivated in the 1980s using his father’s meticulous selection techniques. The Auxillium 2023 is a remarkable blend that showcases both terroirs. The Chablis Grosse Terre 2022 captivates with delicate notes of candied yellow fruit, while its freshness and acidity reflect the terroir, providing an authentic taste experience. In 2023, two cuvées were created, each with a distinctive profile: the Grosse Terre, rich and generous, and the Auxillium, fuller and livelier. Though the 2024 vintage is still young and maturing in barrel, our tasting confirmed its undeniable promise.
